A new trend on the cooking channel and one of our favorite steaks. Freshly cut everday, nearly as tender as a Filet Mignon and half the cost. The flat iron is a relatively new cut that comes from the blade off the front shoulder. Very lean and no waste make it a great steak on its own or added in a stir fry or fajitas!
